INGREDIENTS:

  • 1 cup Almonds
  • ½ cup Unsweetened Shredded Coconut
  • 8-10 Medjool Dates, soaked with pits removed
  • 1 Tbsp Coconut Oil (melted)
  • ½ tsp Salt
  • ½ tsp Cinnamon
  • ½ tsp Pure Vanilla Extract
  • 1½ cups GF Rolled Oats
  • ½ cup Raisins

Soak dates in water for 20 minutes. Remove pits.

Place almonds and shredded coconut into a food processor and blend until crumbly. Add dates, coconut oil, salt, cinnamon and vanilla. Process until thoroughly combined.

Place mixture in a large bowl and mix in oats and raisins.

With your hands, roll the mixture into12 bite sized balls. Store in a sealed container in the refrigerator.
